Soup Fit for A Storm

A winter storm named ‪#‎Jonas‬ is coming and I'm trying to figure out what to make for this weekend. Everyone has pretty much raided the grocery stores for the staples, but I've got those covered. I always keep an extra gallon of milk, carton of eggs and my kids favorite frozen breakfast foods in second fridge (If you don't have one, I highly recommend getting one - mine's is a no frills floor model that was on sale because it was being discontinued) However, I'm trying to think of things that I can make that I can easily reheat in the microwave or don't require any heating at all in case the power fails and our generator doesn't kick-in (that's always a possibility during our winter storms). Since we are not a peanut free house, peanut butter sandwiches are always an option. Maybe a modified version of a nicoise salad might work. 

I have a head of cauliflower, some leeks and a vegetable stock. I'm thinking that tomorrow night I will make cauliflower soup. I also have a bag of carrots, a hand of ginger and some creme fresh. Maybe I will make a pot of carrot ginger soup. My hubby and I had that once at a restaurant. I think it was actually the night he and I stayed in the city after Hurricane Sandy hit our area and we were were without power for several days. I was pregnant with my second daughter and was getting uncomfortable staying in our house so we decided to go into the city for the night, stay at a hotel that had functioning tv and internet and eat a hot dinner. We went to a restaurant that we had never been too and one of the starter dishes on the menu was a carrot ginger soup. I had never had it before, but it sounded like something that would hit the spot. It was delicious. I liked it so much, I decided to try to make it on my own - mind you this was back in 2012 - and I think it turned out well enough that I actually made it for Thanksgiving that year.

In honor of the impending winter storm, I think tonight I'm going to dig out that recipe and make a batch of that carrot ginger soup. Stay tuned...pictures and more posts to come.  ‪#‎sundaycooking‬ for winter storm #Jonas
